The secret of success for cutting crispy bread and pastries perfectly is quite simple. A high quality bread knife’s wavy edge and sharp blade allows you to cut through hard crusts whilst keeping the inside of the bread intact. For many professional chefs, the bread knife is listed in the top three knives used in food preparation, following closely behind the chef’s and paring knife. All of our forged knives are made with high carbon stainless steel X50MoV15 and heat treated to a Rockwell hardness of 58, giving them a razor sharp edge that is also durable enough to withstand any professional setting.
As the name suggests, bread knives are valued highly for their role in bread slicing. Yes. Bread knives need to be serrated so that when they are used in a sawing motion, they can cut through bread with a crusty exterior without crushing or damaging a usually softer interior. Using a non-serrated knife on hard crusty breads will slip on the tough crust and can be dangerous.
Generally, bread knives have a longer blade because it helps cut cross-sectional slices without the point of the knife getting ‘stuck’ in the loaf whilst you are cutting.
At Samuel Staniforth, we recommend that you only sharpen your bread knife when absolutely necessary. The design of a serrated knife means that most of the tool doesn’t make contact with the cutting board, therefore you do not need to sharpen it as often as other kitchen knives.
